Ingredients

  • Paneer
  • Tomato
  • Curd
  • Turmeric powder
  • Red chilli powder
  • Oil
  • Bay leaf

  • Garam masala
  • Water
  • Coriander leaves

 

Recipe:

  •  Coat 200g Paneer Cubes in salt, turmeric and red chilli powder. Fry in 1 tbsp oil on low flame for 2 mins and keep aside.
  •  Heat 2 tbsp oil and add whole spices(bay leaf, black cardamom, cloves, cinnamon) and 1/2 tsp Cumin seeds. Once they splitter add 2 finely chopped onions. Cook till they turn golden brown and add 1 chopped green chilli, 1.5 tsp Ginger Garlic paste. Cook till the raw smell goes away.
  • Next add 1.5 tsp Kashmiri chilli powder, 1/2 tsp turmeric, 1 tsp Coriander powder, 1/2 tsp Cumin powder and mix on low flame. Add 2 tomatoes pureed and Salt. Cover and cook till oil separates. Add 2 tsp whisked curd and mix well. Pour some water and cook for 3-4 mins.
  • Add the Paneer Cubes, 1 tsp Kasuri methi, 1/2 tsp garam masala and mix well. Garnish with coriander leaves and serve hot.

2.   Tehri

      Ingredients:

  • 2 large potatoes, dice them into cubes
  • ½ cup green peas - fresh or frozen
  • 3 tablespoon mustard oil
  • Slice medium-sized onions
  • ¾ cup chopped tomatoes
  • 3 tablespoon chopped coriander leaves
  • 3 green chilies - slit
  • 1 teaspoon red chili powder
  • 1 teaspoon Coriander Powder
  • ½ teaspoon turmeric powder
  • 1.5 cups basmati rice
  • 3 cups of water
  • salt as required.

Procedure:

  • Rinse 1.5 cups basmati rice in water very well till the water runs clear of starch. Then soak the rice in enough water for 30 minutes.
  • After 30 minutes, drain the rice and keep it aside.
  • Heat 3 tbsp mustard oil in the Avias tri-ply pressure cooker.
  • Add cumin and saute till it sputters and becomes fragrant.
  • Then add 1 cup heaped sliced onions.
  • Stir and begin to saute the onions.
  • Sauteing the onions takes a lot of time. So add a pinch of salt for quick cooking of the onions.
  • Saute till the onions become golden.
  • Then add 1 cup tightly packed diced potatoes. Saute the potatoes for 3 to 4 minutes on a low to medium flame.
  • Next add 1/2 a cup fresh or frozen green peas and tomatoes
  • Mix the veggies with the rest of the ingredients.
  • Then add 3 slit green chilies, 1 tsp red chili powder, 1 tsp coriander powder, and 1/2 tsp turmeric powder.
  • Stir and mix very well.
  • Then add rice. Mix the rice very well with the masala and saute for a minute.
  • Pour 3 cups of water. season with salt.
  • Close the pressure cooker.
  • On a low flame, cook the tehri till all the water is absorbed and the rice grains are fluffy and soft.


3. Makhana Kheer

Ingredients:

  • Ghee
  • Saffron
  • Chopped almonds & cashews
  • Makhana
  • Milk
  • Sugar

 

Recipe-

  • - In the tri-ply kadai heat ghee, add chopped almonds and cashews. Roast on low flame and keep aside. Add 2 cups of makhana. Roast on low flame and keep aside.

  • Add milk and let it boil. Once it starts boiling add makhana along with some crushed makhana. Stir and boil. Add saffron milk to this and mix it well. Add sugar to your taste and roasted nuts. Mix everything well and cook it for a min.

  • Ghee
  • Rice
  • Moong dal
  • Cumin 
  • Green chilli
  • Ginger
  • Water

 

Recipe

  •  Add 3tbsp ghee
  •  Add some jeera, green chillies and ginger
  • Now add 1:1 proportion of rice and moong dal
  • Add salt to taste and pinch of turmeric
  • Pour water of 4 glasses
  • Close the lid and wait for 4-5 whistles to come
  • Garnish with cashews and serve it with sambar

5. Pav Bhaji

    Ingredients:

  • Onion
  • Tomato
  • Capsicum
  • Peas
  • Potato
  • Beans
  • Oil
  • Green chilli
  • Turmeric powder
  • Red chilli powder

  • Ginger garlic
  • Cumin powder
  • Salt
  • Water

 

Recipe:

  • Boil the mixed vegetables along with peas, in a pressure cooker with 1 cup of water, for one whistle. Keep aside.
  • Heat oil in a pan, add chopped onions and fry till they turn golden brown. Add ginger garlic paste and fry for 5 minutes. Add tomatoes, green chillies, turmeric powder, chilli powder, coriander powder, and cumin powder, and fry for a minute till all the masalas are well combined.
  • Add the vegetables along with the water, add Pav Bhaji masala, salt and mix well. Mash the vegetables well with a spoon. Add the amchur powder and mix well.
  • Add the remaining 1 cup water and simmer for 2 minutes to get a thick gravy. Remove from the cooktop.
