1- Vegetables are a very important part of our diet that provide us with vitamins, and antioxidants. Boiling vegetables destroys essential nutrients that are water-soluble, (dissolve in water). According to the National Centre for Biotechnology Information of the USA, up to 50% or more of vitamin C is lost when we boil broccoli, spinach and lettuce.

2- Heat is a common enemy of nutrition. What we deep fry, what we smoke or what we grill (at high temperatures of course!) are all harmful and result in the loss of nutrients. Cooking over high temperatures may speed up the cooking process but can be very harmful. 

High flame cooking (above 300 o F) burns all the heat sensitive vitamins of the food and can also produce a carcinogen called acrylamide which is cancer causing.

3- The time taken to cook is inversely proportional to the nutrients that food retains after cooking. The longer the time taken, the lesser the amount of nutrients we consume. Many vitamins and minerals are heat-sensitive and are destroyed when exposed to heat for a prolonged period of time.

4- One of the most nutritious parts of fruits and vegetables is the discarded parts – the stems, the seeds and the stalks. These super parts should ideally be eaten with the rest of the vegetable or fruit to get the most of them.

5- Most of us think that cooking food with a microwave is good, but that’s not true. Because the microwave cooks food using electromagnetic waves and these waves make our food difficult to digest and makes it less nutritious. 

6- We have stopped eating raw food, and if we talk about the facts then raw food contains the most nutrients which we kill by cooking them in under high temperature. 

7- We should not peel fruits and vegetables because the outer layer also contains a number of nutrients which we are directly removing by peeling them. Like every time we eat an apple, we peel the outer layer of the apple, although most of the nutrients of an apple are present in the outer layer only. 

8- Most of us cook food by using the open-lid cooking method. But what we don’t know is with open-lid cooking we are getting rid of all the nutrients from our food. Hence make sure that we cook food by closing the upper lid of cookware. 

9- Most of us use cookware that releases toxins while cooking food which makes our food nutritious. Hence in that case we can always opt for stainless steel cookware which is a reliable option and does not release any type of toxins. 

10- Wonder why cut apples turn brown? That’s oxidation. In simple terms, it’s a reaction that takes place when oxygen has access to food products that alters the chemical structure of food and depletes the nutrient content. This is why it’s recommended to eat cut fruit immediately.
