Afghani Paneer Recipe

Afghani paneer is a popular dish from Afghanistan that is made with paneer (Indian cheese), tomatoes, onions, and spices. It is a flavorful and hearty dish that is perfect for a weeknight meal.
Ingredients:
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 inch ginger, grated
- 1 teaspoon ground cumin
- 1/2 teaspoon ground coriander
- 1/4 teaspoon red chili powder
- 1/4 teaspoon turmeric
- 1 (14.5-ounce) can diced tomatoes, undrained
- 1 cup water
- 1 pound paneer, cubed
- 1/2 cup chopped fresh cilantro
- Salt to taste
Instructions:
- Heat olive oil in Avias Triply Kadai over medium heat. Add onion and cook until softened, about 5 minutes.
- Add garlic and ginger and cook for 1 minute more.
- Stir in cumin, coriander, chili powder, and turmeric. Cook for 30 seconds, until fragrant.
- Add tomatoes and water to the Triply Kadai. Bring to a boil, then reduce heat and simmer for 10 minutes.
- Add paneer to the curry and cook for 5 minutes more, until heated through.
- Stir in cilantro and salt to taste.
- Serve hot over rice or naan.
Tips:
- For a spicier curry, add a chopped green chili pepper to the pan with the onion.
- If you don't have paneer, you can use tofu or tempeh instead.
- Afghani paneer is traditionally served with naan, but it can also be served over rice or with quinoa.
