  • 200 grams pasta
  • 2 cups chopped vegetables (carrots, bell peppers, zucchini, etc.)
  • 5-6 diced tomatoes
  • 3 cups vegetable broth
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • Olive oil

Instructions:

  1. Heat olive oil in a cookpot over medium heat. We would suggest you use a Stainless steel cookpot.
  2. Add the minced garlic and sauté for 1 minute.
  3. Add the chopped vegetables and sauté for 5 minutes or until they are slightly softened.
  4. Add the diced tomatoes, vegetable broth, oregano, salt, and pepper to the cookpot and stir everything together.
  5. Add the pasta to the cookpot and stir everything together.
  6. Cover the cookpot and let everything simmer for 10-15 minutes or until the pasta is cooked and the sauce has thickened.
  7. Serve hot with some grated Parmesan cheese on top.

  • 2 cups basmati rice
  • 2 cups mixed vegetables (carrots, peas, potatoes, cauliflower, etc.)
  • 1 onion, sliced
  • 1 tomato, chopped
  • 1 tbsp ginger paste
  • 1 tbsp garlic paste
  • 1 tsp cumin seeds
  • 2-3 green cardamom pods
  • 2-3 cloves
  • 1 cinnamon stick
  • 1 bay leaf
  • 1 tsp biryani masala
  • Salt to taste
  • Oil or ghee for cooking
  • 4 cups water

Instructions:

  1. Rinse the basmati rice in cold water until the water runs clear. Soak the rice in cold water for 30 minutes.
  2. Heat oil or ghee in a stainless steel pressure cooker over medium heat. Add the cumin seeds, cardamom pods, cloves, cinnamon stick, and bay leaf. Sauté for 1-2 minutes or until fragrant.
  3. Add the sliced onion and sauté until they turn translucent and slightly golden. Add ginger and garlic paste and sauté for a minute.
  4. Add the chopped tomatoes, biryani masala, and salt to the cooker. Cook the mixture for 5-7 minutes or until the tomatoes are soft and mushy.
  5. Add the mixed vegetables to the pressure cooker and mix well with the tomato mixture.
  6. Drain the soaked rice and add it to the cooker. Mix well with the vegetables and tomato mixture.
  7. Add 4 cups of water to the pressure cooker and stir everything together.
  8. Lower the heat and let the biryani simmer for 15-20 minutes or until the rice is cooked and the water has been absorbed.
  9. Turn off the heat and let the biryani rest for 5-10 minutes before serving.

  1. Sambar Rice:

  • 1 cup rice
  • 1/2 cup split pigeon peas (toor dal)
  • 1 onion, chopped
  • 1 tomato, chopped
  • 1 carrot, chopped
  • 1 potato, chopped
  • 1 drumstick, cut into pieces
  • 1 tbsp sambar powder
  • 1 tsp mustard seeds
  • 1 tsp cumin seeds
  • 1/2 tsp turmeric powder
  • Salt to taste
  • Water as needed
  • Oil for cooking

Instructions:

  1. Heat oil in a stainless steel cookpot over medium heat. Once the oil is hot, add the mustard seeds and let them sizzle for a few seconds.
  2. Add the cumin seeds and sauté for a few seconds until they turn fragrant.
  3. Add the chopped onions and sauté until they turn translucent and slightly golden. Add the chopped tomatoes and sauté for a few minutes until they turn soft and mushy.
  4. Add the chopped vegetables to the pot and mix well with the tomato mixture.
  5. Add the rice and lentils to the cookpot and mix well with the vegetables and tomato mixture.
  6. Add the sambar powder, turmeric powder, and salt to the cookpot and mix well.
  7. Add enough water to cover the rice and lentils and bring the mixture to a boil.
  8. Lower the heat and let the sambar rice simmer for 20-25 minutes or until the rice and lentils are cooked and the water has been absorbed.
  9. Turn off the heat and let the sambar rice rest for a few minutes before serving.
