1. Blanching: Blanching is a cooking technique where vegetables or fruits are fully submerged in boiling water and then immediately cooled in ice water. This process helps preserve colour, flavour, and texture and reduces the enzymes that can cause deterioration.

How to do Blanching?
Prepare the vegetables: Wash and prepare the vegetables as needed (trim, peel, cut into pieces). Bring the Strainer Pot with water to boil, using enough water to cover the vegetables fully.

Blanch: Carefully add the vegetables to the boiling water. The blanching time varies depending on the type of vegetable, so an average of 2-3 minutes is better.

Ice bath: Immediately transfer the blanched vegetables to a bowl of ice water to stop the cooking process.

Drain: Remove the vegetables from the ice bath and drain thoroughly.

Now, the vegetables will look bright in colour, increased flavour and perfect texture.
