How to make CRISP BHAJIYAS

A Street Food Sensation
One of the remarkable qualities of onion bhajiya is its versatility. From rain-soaked monsoon evenings to festive gatherings, this snack effortlessly transitions from being a comforting street food to a celebratory dish. It's often enjoyed with a variety of chutneys and sauces that complement its flavors, ranging from tangy tamarind chutney to zesty mint sauce.

Here’s how you make them :
Ingredients :-

  • 2 large onions, thinly sliced
  • 2 potatoes, thinly sliced (or any other vegetables of your choice)
  • Salt, to taste
  • 1 teaspoon carom seeds (ajwain)
  • 1 teaspoon cumin seeds
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon red chilli powder (adjust to your spice preference)
  • 1/2 teaspoon garam masala
  • 2 tablespoons rice flour
  • 1 tablespoon finely chopped green chillies (adjust to your spice preference)
  • A handful of fresh coriander leaves, chopped
  • 1 tablespoon oil
  • 1/2 cup gram flour (besan)
  • Oil for frying
Instructions :-
  • Thinly slice two large onions and two potatoes, you can use any vegetables you like or just make these using a single vegetable.
  • Squeeze out all the excess water from the onions, less moisture will result in a great crunch. Add salt to taste, and 1 tsp of each, carom seeds, cumin seeds, turmeric powder, red chilli powder and 1/2 tsp of garam masala.
  • I store all my spices in @aviasindia ‘s Stainless steel deluxe spice box. It’s made of high quality food grade steel and is convenient to use.
  • Let this marinate for a while then goes in 2 tbsps of rice flour, 1 tbsp finely chopped green chillies, handful of fresh coriander, 1 tbsp of Oil. Add 1/2 cup of gram flour and mix well.
  • We need a semi wet mixture so do not add water more than a few tablespoons.
  • Drop small amounts of this mixture in hot oil and fry until golden brown. Make sure to not overcrowd the pan. Serve hot and enjoy.
